Using local produce (some from its own garden) and sustainable fish and meats, Colterra offers a variety of dining options. Try the “small plate” format and sample several courses, each paired with the wine of your choice. After an opener of duck-liver pâté with bronzed apples, or the red-Bordeaux spinach salad, settle into the honey-cured pork tenderloin with asparagus and potato purée, or spring-vegetable gnocchi with Parmigiano-Reggiano and crème fraîche. For dessert, savor a pear-almond tart with Baileys ice cream or a “chocolate symphony” while listening to Colterra’s live jazz, nightly from 6-8pm.
